Getting healthy...
So, in a move completely unrelated to the Lenten season, Galina and I have decided to minimize the intake of meat for the nonce. This led to an episode of cooking the other day, in which I "winged" an eggplant parmesan. The result was quite edible, although the next time I make this dish, I should probably take it a little easier with the tomato sauce.
Apropos of which (sort of), I am beginning to tire of the ever more frequent instances of "sticker minishock" that take place when visiting the food store. This most recent trip found me doing a fairly good impression of a fish out of water as I regarded the price of shredded cheese. (Yes, I know, the unshredded stuff is not as expensive, but the unshredded stuff costs more now, too!)
When I do this again, I may also endeavor to make not so much a "traditional" (whatever the heck that means in this household) eggplant parmesan as an eggplant lasagne. Plus mushrooms, onions, and anything else that I lay my eyes on. We'll see. :^)
A little while ago, egged on in part by some acquaintances of ours (and perhaps in part by my tai chi attendance), Galina took advantage of some kind of special deal and joined what used to be a Bally's Total Fitness place over by I-45 in Webster (now run under the name Blast). Yesterday, I went along with her, mostly for moral support, and in the end, she upgraded her membership to a level that would, inter alia, allow her to bring me along as a guest. Exercise is good, and frankly, I can use all of it that I can get.
It's getting late... time to go examine the insides of my eyelids.
