Definitely maybe...
Jan. 22nd, 2011 07:50 pmThe weather looked uncertain this morning, and the thermometer was holding at 10°F, well below freezing. Conflicting forecasts allowed one to draw the conclusion that we would have snow, or maybe not. With this in mind, Galina and I set off for Durango, with the idea of doing some shopping.
Somewhere within the first few minutes of our first task (fill up the gas tank), we had lost our enthusiasm for Durango and figured we could shop locally and still save money in the long run. Durango is, after all, 60 miles away, which also hinted at huge savings in time (though it's not as if we needed to be any place in particular).
For dinner, I made a simple lentil soup (1 cup chopped onion, 1/2 cup each of chopped celery and carrot, sauteéd in 2 tbsp. olive oil for about 10 min, to which one adds 2 quarts of chicken broth, a 10-oz. can of chopped tomato, 1 pound of lentils, and some cumin and coriander), to which I added some sweet Italian sausage. Galina liked it, and so did I.
We only had the "red" lentils in our pantry, and they came out very well. Galina thinks the soup would be even better with the more traditional "green" lentils, and I have nothing against the idea, but I must say I prefer the yellow color of today's product to the darker hue one obtains from "green" lentils.
Other 'n that, it's been a fairly lazy day, actually.
Cheers...
