I checked the email from time to time throughout the day, mostly out of habit, because I knew that nothing short of an extraordinary "emergency" translation was going to deter me from my path, which was to help Galina get the place ready to entertain.

We don't have people over much, and when we do, it's generally just a couple of people at a time. The last time we entertained for a larger number was probably when we lived in Colorado, and it would have been for family.

Down here in Houston, Galina fell in with some folks who get together every six weeks or so to talk about a book that been selected by general approbation. The locale has roamed from house to house, until finally tonight was our turn.

We decided to make brisket, which was something of a risk, because I've never made it before. However, things like that rarely deter me, so we found a 5-pound slab of trimmed brisket and summarized the main points of about a half dozen YouTube videos on how to make brisket in the oven, and proceeded to apply what we learned.

The only thing that bothered me, upon looking at the end product when it came out of the oven, was the amount the meat had shrunk due, undoubtedly, to the loss/conversion/rendering of fat from the muscle fiber of the meat. So, I hied myself down to the bar-b-que place down the street and bought a "backup" 2 pounds of sliced brisket to add to what we had prepared.

It was a good thing, too, as at the end of the evening, as we were putting things away in the fridge, it was obvious that we were putting significantly less than two pounds of brisket meat into a container for leftovers.

A good time was had by all. I definitely had a bit too much to eat, but its' not as if we do this kind of thing ever day.

Cheers...
